National Pancake Day took place on March 12th.. Did you eat your stack? Growing up I don't remember my mother cooking pancakes too often. Our family were more cereal eaters than pancake eaters when it came to breakfast. Seems like we ate them more for supper than breakfast.
Pancakes by themselves are not very good unless they are drowned in syrup and butter. These days I try to stay from all the sugar in syrup. If I'm going to eat pancakes more that once or twice a year I need to find ways to make them enjoyable without the ocean of syrup that most people drown their pancakes in. The flexibility of a flat pancake makes it ideal for stacking with all kinds of ingredients between the layers of the silky golden circles.
Pancakes are quick, easy and can be cooked well ahead of time. They are not just for breakfast. They are just as good for supper and that's when I ate them a couple of times this week. First it was pancakes with a layers of bananas and layers of cinnamon butter and topped with apple sauce. Second it was pancakes layered with sunny side up fried eggs topped with butter. How ever you eat your pancakes you probably don't eat them often enough so get the griddle or skillet out and cook some silky golden circles
