Another Fourth Of July

     The Fourth of July means it's time to bring our the tube steak.  Plain old 50 cent packages of  franks or expensive sausage it really doesn't matter they all cook up nicely.  Million of Americans will be grilling, roasting, smoking, frying and boiling the lengths of meat.   All natural or processed, they all go good on a bun.
     These kinds of meats  make for quick and convenient  meals.   Make sure the meat is completely  defrosted before it hits the fire, you don't want the outside cooked while the inside is still raw.  Don't cut your franks or sausage lengths in half and throw both pieces on the fire, juices will go everywhere causing the fire to flare up.  Be sure to get the correct temperature set before putting the meat on the fire..  Cooking any kind of tube steak is really pretty simple if one remembers these simple rules but rules are made to be broken.  Back in my drinking days I'll admit to blacking a few franks to a blacken crisp. A few more beers and a little more mustard covered up those mistakes.  Just as important as the meat itself are the buns.  Personally I prefer a cheap meat and splurge on the buns.  A good bun will soak of the juices, hold the topping well and won't fall apart in your hand before you finish your meal.
     Another Fourth of July has come and gone and yes I cooked some tube steaks yesterday.  My meal was pretty simple.  I put some

sausage links in the crock-pot, turned it on low and left for the day attending several fourth of July events.  Getting home in the afternoon, served the sausage with a side of potato salad, and a baked 1015 sweet onion.  Chose not slap the tube steak in a bun but never fear, the left over sausages will find those buns later this week.  Finished out this Fourth  with a bowl of Blue Bell vanilla ice cream.  Hoping you had a happy holiday
