The Incredible Eatable Egg

     Cardiovascular disease is a big cause of death so it's wise to try to eat a low cholesterol diet.  Most of us don't pay much attention to our diet until the doctor jumps on our ass about our weight or high cholesterol level.   I've been as guilty as anyone about eating what I want when I want but the older I get the more I  began paying more attention to my diet.  There are some foods I watch closer than others but if I really enjoy a particular food, I'll make excesses when it comes to that particular food's cholesterol content.  One of those foods is eggs.  I love eggs but one egg has 200 milligrams of cholesterol.  The federal guide lines for daily cholesterol consumption is 300 milligrams daily.  How can anyone eat just one egg for breakfast?  I don't drink, don't smoke, eat as little sugar as possible, have pretty good blood pressure and now their telling me I can't have three scrambled eggs for breakfast.  Maybe I'll just piss Mr. Federal Guide Lines off and add three strips of bacon to my next plate of three or maybe four  scrambled eggs.
     Eggs are inexpensive, readily available, easy to prepare, easy to digest, full of nutrition and taste wonderful.  Whether scrambled or hard boiled they have found a place in my diet for a very long time.  The bottom line is while eggs may not be the optimal food item they are not the worst either.  They fall somewhere in the middle of healthy food choices.  I've cut my egg consumption way down but I won't ever give them up completely.
